Bajra ki Roti | Sojja Rottelu

Bajra ki Roti

Bajra ki roti is a Rajasthani dish made of pearl millet's or sajjalu (in telugu). These roti's are enjoyed along with lahsun ki Chutney & kadhi. This roti's are little different from your regular roti or chapati in texture ad taste. As all of the dishes these roti's are easy to make & delicious to eat.

Bajra ki Roti
Cooking Details
Prep Time-20mins 
Cook Time-15mins 
Serves-5 roti

Ingredients
1Cup bajra flour
4Tbs atta flour 
2Tbs butter
4Tbs dried fenugreek leaves
Salt to taste 
Warm water to knead dough
Directions
- Mix bajra, atta flour,fenugreek leaves, salt in a bowl. 
- Add little by little warm water while forming a dough. 
- Close dough with a wet cloth & allow it to sit on a counter for 15mins. 
- Now take a foil or a plastic sheet & grease it with little oil. 
- Divide dough to equal balls. 
- Take a ball of dough & place it on the sheet. Now press it with less pressure, while expanding dough on all sides. 
- Don't expand it too thin & round the edges nicely. 
- Heat pan with butter/ghee.Place a roti on it.
- cook it on one side & apply ghee to roti. Cook for few seconds & reverse it to other. 
- Now layer a little ghee & allow to cook. 
- You can see little dark circles forming on each side you cooked. 
- Transfer roti to a plate & repeat the same with rest of the dough balls.
Note
- Don't add too much water. 
- Add little more of flour if needed.

Methi Thepla

Methi Thepla

Gujrati cusine is vegetarian mainly & the staple includes kichidi, pickle & chaas. The dishes of Gujarat are very distinctive in taste. The well know & widley dishes include Dhokla, Khandvi & many more. Today I'm sharing one of the much known dish "Thepla" here.
Thepla/Dhebra is a roti or bread made of mixture flours, spices & veggies. This methi thepla roti I'm sharing is a mix of fenugreek leaves & spices. It is a healthy & easy dish you can enjoy regularly.

Palak Roti

Methi Thepla
Prep Time-40mins | Cook Time-15mins | Yields-5roti's 
Ingredients
3/4Cup wheat flour + Some to dust chapati's
1/4Cup besan
1Cup fenugreek leaves (Methi leaves)
1Tsp chili powder
1Tsp coriander cumin powder
1Tsp ginger garlic paste
1/4 turmeric
2Tbs yogurt
Salt to taste
1Tsp oil
Water to knead
2Tbs butter /oil 
Directions
- In a bowl add all the ingredients other than water. Now mix the ingredients by adding little by little of water & form in to a dough. 
Close it with a wet towel & allow it to sit for 10mins to 30mins on the counter.

- Now divide the dough in to equal parts & form them into balls. 
- First dust the floor then take a dough ball & press it flat. 
- Dust it & using a rolling pin roll it flat & round in shape. 
- Repeat the same with rest of the balls. 
- Heat a pan. Spread little butter on the pan & place a roti on it. Brush some ghee on the upper side.
- Cook it for few seconds & flip it to other side. Now the roti is half done.
- Next xook on both sides till you see small brown spots. This means the roti is done & ready. 
- Repeat the same with rest of the roti's. 
- Serve them with a curry, pickle & yogurt.
Note:
- I use very less fat to cook roti's. You can still see some flour that I used while rolling.

Avocado Garlic Naan

For this weeks blogging marathon I'm showcasing "Naan" recipes. Today I'm sharing recipe for "Avocado Garlic Naan with no yeast".Check this Blogging Marathon page for the other Blogging Marathoners doing BM#38.

Avocado Garlic Naan

Naan is a flat bread that has many varieties & is adapted, modified based on the local cuisine. You can tweak the dish according to your taste buds wish. The varieties include few of these plain naan, stuffed naan, butter naann.. etc. Here is a avocado garlic naan I experimented mixing two different flours & loved it. It is not a stuffed naan but I modified the basic naan by adding the avocado pulp, which gave a creamy taste to the dish. 

Avocado Garlic Naan
Prep Time-2hrs | Cook Time -15mins | yields-10naans
Ingredients 
1Cup all purpose flour

1Cup atta flour
1/2Tsp baking powder
1/4Tsp baking soda
3Tsp yogurt

1/4Cup milk
1Tsp sugar 
4Tsp oil
Salt for taste
1Full avocado deseeded & scooped
2Tbs butter @ room temperature

3Garlic minced
Directions
Making Dough:
- In a bowl mix all purpose flour, atta flour, 
yogurt, baking powder, soda, avocado, salt & sugar.
- Knead it to form a dough. Add oil & knead it well. Adjust salt if needed. 
- Keep this dough closed with a wet cloth. Allow it to sit for at least 1hr.

- Mix minced with butter & keep aside.
Making Naan:

- Divide dough in to equal balls. Dust them with flour.

- Using a rolling pin roll naan as shown above.

- Heat pan with butter. Place a naan on pan. Brush it with water & close it with a lid. Cook on medium heat.

- Leaves for more than 20sec without disturbing. You can see bubble forming as above. Now brush some garlic butter & flip naan. Brush it with garlic butter on the cooked side too. 
- Cook on the other side till you see brown spots. Transfer to a plate & serve warm. 
- Repeat the same with rest of the naan's.

Naan - A Flat Bread

Naan

Naan is a flat bread made using flour, yeast, yogurt & milk. To make a naan one might have a tandoori oven. As a replacement you can use a oven or stove top pan method in making this bread. I made this dish using a stove top pan method & it is one of the easiest methods to make too.


Naan
Prep Time-3hrs | Cook time-15mins | Yields-10naan's

Ingredients 
2Cups all purpose flour
4Tbs yogurt 
2Tbs oil
2Tsp active yeast
2Tsp sugar 
1/4Tsp baking powder
Salt
2Tbs butter @ room temperature
2Tbs sesame seeds

Directions
Making Dough:
- Take yeast in a bowl along with sugar & to that add 1/2 cup warm water. Dissolve & keep it aside. 
-  Sift flour & baking powder in to the yeast mixture . - In another bowl mix yogurt, oil & salt. Whisk them together & add them to the flour bowl.
- Mix & form it to a dough. If needed add some water while making it a dough.
- Close it with a wet cloth & keep it in a warm & dark place. Leave it for 2hrs minimum.
Making Naan: 
- Divide dough in to equal balls. Now take a dough ball & dust it with flour.
- Using a rolling pin roll the dough flat. Sprinkle few seasame seeds & roll it. 
- Repeat the same with rest of the dough. 
- Heat a pan & brush some butter to the pan & place the rolled naan. Close it with lid. 
- You can see bubble's on top of the naan. Brush some butter & flip naan. You can see it is cooked perfect & you can also see brown strains.
- After few seconds flip & check if the naan is cooked. You can see few brown spots on the other sides. 
- Brush some butter & transfer it to a plate. 
- Repeat the same with rest of the dough. 
Note: 
- Allow the dough to raise for more than 2hrs.

Garlic Naan With Out Yeast

For this weeks blogging marathon I'm showcasing "Naan" recipes. Today I'm sharing recipe for "Garlic Naan with no yeast" . Check this Blogging Marathon page for the other Blogging Marathoners doing BM#38.


Naan is a flat bread widely popular in many parts of the world. The basic recipe of naan uses yeast as a rising agent but in this recipe I replaced it with baking powder & soda. Naan can be flavored up with variety of ingredients to make more delicious & here I'm sharing one of those flavored Naan's with you all.

Garlic Naan
Prep Time-2hrs | Cook Time-15mins | Yields-10 naan's
Ingredients
2Cup maida
1/2Tsp baking powder
1/8Tsp baking soda
2Tbs yogurt
1Tbs milk
1/2Tsp sugar 
Water
Salt 
2Tbs butter @ room temperature
3Tbs minced garlic  
Few coriander leaves for garnish

Directions:
- In a bowl mix yogurt, milk & sugar.
- Now add maida, baking powder, soda, salt & sugar.
- Knead it to form a dough by adding little water or as needed. Adjust salt if needed. 
- Keep this dough closed with a wet cloth. Allow it to sit for at least 1hr.
- Mix minced garlic & butter in a bowl.
- Now divide the dough in to 4 balls. Roll them using a rolling pin flat. 
- Add minced garlic & coriander to butter. Now apply butter on to one side of the flat bread & repeat the same with rest of the dough. 
- Heat a pan & when pan is hot lay a naan on the pan & close it with a lid . 
- You can see bubbles forming on the bread. Flip the bread & apply garlic butter to the cooked side.
- Now cook other side with out a lid. 
- Flip & check if the naan is done. Apply the garlic butter to naan & transfer it to a plate.
- Repeat the same with rest of the dough balls. 
- Serve warm & enjoy.
Note: 
-Instead of garlic you can use sesame seeds, onion seeds.

Palak Roti | Spinach Roti


Palak Roti
Palak Roti or spinach roti is a healthy & nutritious dish that is easy to make & delicious to have. I added a hint of garlic to this dish to remove the muddy smell of palak & it sure did it's magic in this dish. These roti's can be enjoyed along with any curry , yogurt & a pickle

Palak Roti
Prep Time- 40mins | Cook time-15mins | Yields-5 roti
Ingredients
1Cup atta flour
2Cups chopped spinach 
1Garlic clove 
2Green chili
1Tbs oil
Salt 
water 
Directions
- Grind spinach, garlic & green chili to a smooth paste.
Palak Roti

- Mix atta flour, spinach paste & salt. 
- Using a little water or as needed to make a dough.

Palak Roti

- Divide the dough in to 5 equal parts. 
- Take 1 ball of dough & dust it with atta flour. using a rolling pin roll the dough flat as seen in the pic & keep aside. 
- Repeat the same with rest of the balls. 

Palak Roti

- Heat a pan with 1/2Tsp oil. Place on roti on the pan. Allow it to cook on onside & rotate it to the other side & add another 1/2 Tsp oil & brush it thru the roti.
- When you see the dark spots as above remove roti on to a plate. Repeat the same with rest of the roti's. 
- Serve them with any side dish you like.
Note:
- Adjust water according to the spinach paste. 
- I used a very little oil in making them. Use oil as needed.
- Use multi grain flour for a healthier version of this roti.
Make sure the the dough is equally distributed.
- Dust the dough in between rolling, if needed.

Dhuska | Dal Crepes


Dhuska

Dhuska is a Bhojpuri dish & made for festive preparations. This is actually a  deep fired dish but I made it a pan fried to make it healthy & got this idea from vaishali sabani's blog. I enjoyed them with no guilt & felt awesome. Here I have added both methods of making them.

Dhuska
Prep Time-8hrs (Soaking & grinding) | Cooking Time-5mins | Yields-3servings
Ingredients
1Cup rice 
1/2Cup chana dal
1/4Cup urad dal
1/2Cup onions finely chopped 
3Green chili's minced 
2Tsp cumin
Oil
Salt
Directions
- Soak the rice, chana dal & urad dal overnight. Grind them to a smooth batter by adding little water at a time. Batter should be thick & not watery.
- Mix salt, cumin, onions & green chili to batter. 
Method 1:
- Heat a pan with oil for deep frying. Once the oil is hot enough add a full ladle of batter to oil. 
- Deep fry it till it cooks well. 
- Remove on to a tissue paper to drain the excess oil. 
- Repeat the same with rest of the batter
Method 2:
- Heat a pan with 1 Tsp oil. Add a full ladle of batter to pan & allow it to cook. Now flip to other side & allow it to cook on both sides. 
- Repeat the same with rest of the batter.
- Serve them with Ghugni or along with a chutney & enjoy.
