Mango Avocado Salsa



Mango Avocado Salsa is a tasty & simple dip that can be made & served with less hassle. Salsa is a mexican style dip made of fresh tomatoes, onions, jalapeño peppers, salt & lemon juice. You can always tweak the recipe as you like. This dish doesn't require any cooking & it is easy breezy to make.


Prep Time-10mins | Serves-2people
Ingredients 
1Mango chopped
1Avocado deseeded & chopped 
1Tomato finely chopped 
1/2Onion finely chopped 
2Green chili's / jalapeño deseeded & sliced 
1Tbs lemon juice 
Salt to taste 
Cilantro/Coriander leaves for garnish
Directions 
- In a bowl mix all the above ingredients.
- Adjust taste if needed. 
- Serve with tortilla chips.
Note
-You can cut mangoes to much smaller pieces. Make sure that you won't mash them.

Overnight Oatmeal with Mango & Almonds | How to Make No Cook Oatmeal


Overnight Oatmeal is a simple yet easy way of making your breakfast ahead of time. It is healthy & feels filling in your tummy. Breakfast is the main meal of the day & it is supposed to be heavier then lunch or dinner, so you should always love gobble on healthy breakfast.
The recipe I'm sharing includes old fashioned oatsmilkmango pieces & yummy almonds on top. I came across few recipes that used yogurt as well in the recipe. I'm sure going to use it in my next recipe, but for now enjoy this dish & don't skip your breakfast.


Prep Time-8hrs | Serves-2people
Ingredients
1/2Cup + 4Tbs oat {old fashioned oats}
1Cup milk {almond milk}
4Tsp brown sugar
1/2Cup finely chopped mangoes
Few almonds chopped for garnish
Directions
- Take 2 bowls. 
- Add 1/4cup + 2Tbs of oats in each bowl. 
- Next add 1/2 cup milk in each bowl.
- Now add 2tsp sugar in each bowl.
- Next add the 1/4cup chopped mango on them. 
- Now refrigerate them overnight. 
- While serving top the bowls with almonds.
Note
- You can play with flavors as you like. 
- The quantity of oats was sufficient & perfect for me. Adjust oats as needed.
- You can replace brown sugar with normal sugar.

Omelette in Mug

Omelette in Mug

Omelette in Mug - Yes, you read it right. I made an omelet in mug & it was awesome. I came across this recipe in a food site & decided on trying it. I like the traditional way of making omelet but, this way it reduces the make time & less messy too.
This omelette is made of egg whites, but you can also use a whole egg if you like. Egg whites are filled with protein & I love getting protein through food rather than powders. I avoided using oil in this dish & off course you are free to use it. If you want to use oil, grease the mugs with some oil as needed. Using a microwave simplifies & takes less time in cooking. In this dish we microwave it for just 2minutes & the omelette is ready.

Prep Time - 5mins | Cook Time-2minutes | Serves-2people 
Ingredients 
5Egg whites
1/2cup finely chopped onions 
1Tsp red chilli powder {cayenne pepper}
pinch of turmeric
1/4Tsp garam masala powder {optional} 
Salt to taste
Few coriander leaves to garnish
Directions 
- In a bowl add above ingredients other than coriander leaves. 
- Mix them well. Adjust salt & spiciness if needed. 
- Take 2mugs & fill them up half the way. 
- Now microwave it for 1minute.  Take it out & mix the ingredients. 
- Now microwave for another 1minute.
- If you find any liquid then microwave again.
- Garnish with coriander & serve. 
Note
- Microwaving time varies with instrument. Adjust time as needed. 
- You can add veggies if you like. 
- Always use bigger mug. 
- Grease the mugs if you like to. 
- You can use whole egg with out discarding yellows.

Pineapple Cantaloupe Cooler


After a good workout I just want to relax myself with a glass of juice. So I started trying out mixing different fruits & juicing them. I prefer fresh juices rather than store bought ones. While making them there are few failures & some successes. As you see I prefer to avoid added sugar to the juices until it is a must. Here is one of those successful one's that we loved so much.
Enjoy the drink!!!
Prep Time-20mins | Serves - 4people
Ingredients 
1/2Pineapple juiced
1Cantaloupe juiced
1Tbs lemon juice {optional}
1Tbs sugar/honey {optional}
Directions
- In a pitcher mix all the above. 
- Balance taste if needed.
- Chill & serve.
Note
- I haven't used sugar/honey in my juice.

Mango Strawberry Punch

Mango's aren't my favorite fruit. Back home, while growing up at my parents's place we were surrounded by mango trees. But I never liked them to heart & never felt the urge to have this fruit.
So to reduce my unlikeliness towards this fruit I blend it with other fruits, which are much sweeter & can balance the taste of this fruit. The drink I'm sharing is well balanced with flavors & also energy boosting. 
Enjoy the drink !!!

Mango Strawberry Punch

Prep Time-10mins | Serves - 3-4people
Ingredients 
3Cups mango juice
12Strawberries {frozen or fresh}
3Oranges juiced 
2Tbs honey /agave {optional}
Directions
- Blend all the above other then honey. 
- Flavor up with honey if needed.
- Chill & serve {or} add few ice cubes & serve right away.
Note
- I used store bought mango juice. 
- Quantity might change if used mangoes.
- I haven't used honey in my drink.

Cantaloupe Ginger Mocktail

  

Cantaloupe Mocktail  is a blend of fruit juice along with ginger syrup & lemon juice. This mocktail twisty in flavor & refreshing. 



Prep Time -30mins | Serves - 3to4people
Ingredients
1Cantaloupe / 3&1/2Cups juice
Big piece of chopped or minced ginger / 4Tbs big chunks of ginger 
1/2Cup water
2Tbs lemon juice
2Tbs sugar
Few mint leaves for garnish
Directions 
- Boil water along with sugar & ginger.
- Dissolve sugar completely & switch off heat. 
- Allow it to cool completely & filter out ginger from syrup. 
- Now stir in cantaloupe juice with lemon juice & sugar syrup. 
- Chill & serve with garnish or serve right away with few ice cubes. 
Note
- I used minced ginger & loved the flavor it gave to the mocktail.

Watermelon Mocarita | Watermelon Mocktail


Watermelon Mocktail

Mock-tails are non- alcoholic drinks that are made of mixing different juices. You can modify many cocktails in to mocktails by omitting alcohol from them.
Watermelon Mocarita is a mocktail, which is somewhat similar to non-alcoholic blend of margarita. In this drink I mixed watermelon juice with lemon juice & flavored it with salt. You can replace salt with sugar but for me it was perfect & refreshing with salt.
Enjoy the drink!!!

Watermelon Mocktail
Prep Time - 45mins {cooling + making} | Serve - 3 - 4people 
Ingredients
3Cups watermelon / 6Cups cubed watermelons 
1/2Cup water {optional}                                       
2Tbs lemon juice
1/2Tsp salt
Few small watermelon pieces to garnish
Directions
- Extract juice of watermelon cubes using a juicer. 
- Filter the juice to remove pulp. 
- Stir in water, lemon juice & salt. If needed adjust them as you like.
- Chill & serve with few watermelons on top or you can serve right away with few ice cubes. 
Watermelon Mocktail

Note
- I diluted watermelon as I'm not a big fan of the taste. 
- You can omit water if you don't want to.

Tomato Onion Raita


Raita is a side dish served along with biryani, pilaf & many rice dishes. Raita is simple & easy to make. It accompanies rice dishes & completes the meal. This raita is a one of the many variations you can make. 

Prep Time - 5mins | Serves-2people
Ingredients

1Cup Curd
1/4Cup water {Adjust water as needed}
1/4Cup finely chopped onion
1/4Cup finely chopped tomatoes
1/2Tsp cumin powder
2Green chili's chopped
Cilantro to Garnish {Coriander leaves}
Salt to taste
Directions 
- In a bowl mix curd & water. Mix them to a smooth paste. 
- Add onions, tomatoes, green chili's, cumin powder & salt. 
- Garnish with coriander leaves. 
- Serve as a side to rice dishes.

Biryani Chammanthi | Green Coconut Chutney


Biryani Chammanthi or green coconut chutney is accompanied as a side dish for malabar biryani. This side dish is creamy & spicy. It goes well with biryani & other flavored rice dishes. The greens in this chutney give it a nice tint of color & also add flavor to it. The other variation of this chutney is you can replace yogurt with lemon juice in the chutney.


Prep Time-5mins | Serves-2people 
Ingredients 
1Cup grated coconut
2Tbs chopped mint
2Tbs chopped coriander leaves 
1Garlic chopped 
3Green chili's {Adjust as needed}
1/4Cup yogurt
Salt to taste
Directions
- Grind all the ingredients above to smooth paste. 
- Adjust salt & green chili's if needed. 
Note
- Don't add water while grinding. 
- Replace yogurt with 1Tbs of lemon juice or as needed.

Amarkhand

Amarkhand

Amarkhand is a variation of shrikhand. In addition to the ingredients of shrikhand mango pulp is added in this dish. The dish tastes smooth, creamy & tempting.


Amarkhand
Prep time-4hrs | Serves-2people
Ingredients 
2Cups thick yogurt {curd}
2Tbs sugar {adjust accordingly}
1/2Cup mango pulp
4tbs milk
1Tsp saffron 
1Tsp cardamon powder {elachi}
Few chopped almond
Few pistachios chopped 
Directions 
- Take a cheese cloth with yogurt. Tie it tight & hang it to drip the extra water in curd.
- Leave it for at least 3hrs. Squeeze any left out water from the curd carefully.
- In a small bowl add saffron & 1Tbs warm milk. Keep aside. After few minutes milk will change it's color to a light orange.
- In a bowl add yogurt, mango pulp, cardamon powder & sugar. Beat it smooth while adding 3Tbs milk along with saffron milk.
- Beat it smooth till sugar dissolves completely.
- Scoop it up into a bowl & refrigerate it for some time. 
- Garnish with nuts & serve chill.
Note
- Sweet was just enough. Adjust according to your taste.
- You can use a fat free yogurt for a healthy version. 
- Using greek yogurt would reduce the draining process time of curd. 
- If possible keep curd refrigerated while draining water. Yogurt might become sour if the climate is hot.
