Eggless M&M Cookies

Today morning when I woke up I thought I will be full busy updating my blog & would be done by end of the day. But guess what I was stuck with some other work which needed much attention & just left my blog all alone.
But side by side I made some time to bake these colorful M&M cookies. I have seen these cookies around all time & was just waiting for a good opportunity to bake them.   


Yields 6 Cookies
Ingredients
1/2 Cup wheat flour
2 Tbs corn flour
1/2 Cup M&M's
1/4 Cup fine sugar
1 Tbs milk (Adjust acc..)
2 Tbs butter @ room temperature / olive oil 
1/2 Tsp baking powder
1/2 Tsp vanilla essence 




- Pre-heat oven @350 degrees & set your cookie try with parchment paper. Keep aside & continue with batter mixing.

- In a bowl sift wheat & corn flour.To that add the m&m's, sugar & baking powder. 
- In another bowl mix milk, sugar, vanilla essence & butter, beat them to soft & smooth consistency. 


- Now mix the dry & wet ingredients. Divide the cookie dough into 6 equal balls. 

- Arrange them on cookie tray & pat them to get round shape. Repeat the same with rest. 



- Bake the for 15mins for a chewy texture & a 10mins more for crunchy texture. 

- Remove from oven & allow them cool on counter before serving. 
* Serve them with milk, coffee or Tea. 

Note: 
- I made the same M&M's with all-purpose flour & they were just perfect. The recipe remains the same & all you need to change is wheat flour to all-purpose flour.

Eggless Funfetti Cookies

I'm again back with blogging marathon. This time we blog for 3 days at a stretch. So this time I opted for 3 different cookies & I decided on making them eggless.


Yields 6 Cookies
Ingredients
1/2 Cup All-purpose flour
2 Tbs corn flour
1/2 Cup sprinkles
1/4 Cup brown sugar 
1 Tbs milk
2 Tbs butter @ room temperature / olive oil 
1/2 Tsp baking powder
1/2 Tsp vanilla essence 



- Pre-heat oven @350 degrees & set your cookie try with parchment paper. Keep aside & continue with batter mixing.
- In a bowl sift all-purpose & corn flour.To that add the sprinkles, brown sugar & baking powder. 
- In another bowl mix milk, sugar, vanilla essence & butter, beat them to soft & fluff consistency. 
- Now mix the dry & wet ingredients. Divide the cookie dough into 6 equal balls. 
- Arrange them on cookie tray & pat them to get round shape. Repeat the same with rest. 



- Bake the for 20mins for a chewy texture & a 10mins more for crunchy texture. 
- Remove from oven & allow them cool on counter before serving.

Nan Khatai - Indian Eggless Cookies


Nan Khatai, the Indian eggless cookie is a perfect treat for any occasion. I saw this recipe going around in many blogs & was just waiting for the perfect moment to make them. 
This is one of those recipes, which requires very few ingredients & can just get a perfect cookie. There are many variations for this recipe that I have come across & I tried the simple one as a beginner. 


Yields : 8 Nan Khatai's 
Ingredients
½ Cup All-purpose flour
1/4 Cup ghee/butter
¼ Cup powdered sugar (Adjust Acc.)
½ Tsp. cardmon powder
Crushed pista & almonds for garnish


- Preheat oven @ 200 degrees. Layer your baking sheet with parchment paper.
- Take all the ingredients other than garnishing ones. Mix them well to a round dough.


- As shown above make little balls as shown above. They make 8 to 9 balls.
- Pat the ball into a flat round & roll it in pistachio & almond mixture & place it on the baking sheet.
- Repeat same with rest of the balls. 


- Bake them @ 200 degrees for 20 mins.
- Remove them from oven & allow them to cool for 10mins on wire rack before you serve. 


Serve with tea, coffee & milk.

Note: 
- Add another 2 Tbs.butter if needed.
- Garnish the cookies as you wish.
- Don't over bake them for more then the time needed. They become hard on the outside. ( Own experience) 
- Once you have rolled the dough check if you need to do any sugar adjustments.

Eggless Honey Oatmeal Blueberry Cookies

Cookies, cakes, deep fried dishes are never my choice of dishes. I know it's very hard to resist them so I try to avoid making them. Today I’m sharing one of those recipes, which uses less sugar & butter in making. If you have observed I normally replace butter with vegetable butter, which reduces at-least some of the calories in a dish.


Yeilds :12 cookies
Ingredients
1/2 Cup old fashioned oats
1/2 Cup all-purpose flour
1/2 Cup brown sugar
3/4 Cup blueberry raisin
Pinch of salt
1/2 Tsp. baking soda
1/2 Cup butter @ room temperature
1/4 Tsp. vanilla extract
1 Tbs. water / milk ( As needed)


- Preheat oven @350 degrees. Layer your pan with baking sheet
- In a bowl mix all the wet ingredients & whisk them. Now in another bowl sift flour & to the same bowl add oats, raisins, salt & baking soda.
- Now little by little add the dry ingredients to to wet ingredients. Add little milk / water as needed to make a ball of dough.
- Now divide the dough in to equal ball & arrange them on the pan. Pat them to get a round shape.



- Bake them @ 350degrees for 20mins or more if needed. They should look brown & crisp.
- Remove from oven & allow them to cool. Store them in a air tight container for future enjoyment.
Serve them with coffee or milk.



Note:
- Don't add too much water / milk. It might make your dough runny.
- Add another 1/4 cup brown sugar if you need a little sweet one's.
- You can replace blueberries with raisins & dried cranberries too.

Eggless Elachi Thumbprints

This year I had spent around 4months in the India & unfortunately I had to stay thru summer there. It was unbelievably hot, temps were around 46 to 48 degrees. I felt like I was sitting in a hot oven & being baked for days. 
I was experiencing the same when I was baking this thumbprints. It's end of summer here in US & the temps are @ 35 degrees for past few days. I was in two minds whether to bake or not & at last did it. I switched on heater to A/C mistakenly & it was just baking me in & out. House was heating up & suddenly it felt like house was on fire. 
After all that nonsense happened & the time when cookies were baked I was just jumping with joy. They were irresistibly delicious .

Yields :14 Thumbprints
Ingredients
1 Cup all-purpose flour / maida
¼ Cup sugar and 2 Tbs. sugar to roll
¼ Cup butter
¼ Tsp. baking powder
¼ Tsp. salt
½ Tsp. vanilla extract
2 Tsp. elachi powder
½ Cup strawberry jam



Preheat oven @ 350 degrees.
Sift flour, salt & baking powder in a bowl.
In another bowl whisk sugar & butter to light & fluffy. To that add vanilla extract, elachi & egg. Just whisk them with sugar & butter. Now add the flour mixture little by liitle & fold it till the flour is mixed well.
Layer your baking sheet with parchment paper & start making some dough balls.
Take a scoop of dough & roll it in to a ball. Roll it in the extra sugar we kept & place it on the baking sheet. Now press gently on top of the dough like you are making a slight hole in the middle. Repeat the same with rest of the balls.



Bake them @ 350 degrees for 20 mins. After 10 mins of baking remove the baking sheet out of oven & quickly fill the jam in the holes. Now bake for another 10mins & remove them from oven. Allow them to cool on your counter top.



Serve as you want. I love having them with coffee or tea.

Note: 
1.     If you think the dough is little runny cover it & refrigerate it for 30min. It will be easy to roll some balls then.
2. Adding jam after 10mins of baking will avoid it to run & mess up your cookies. ( I had that problem with couple more of them)
