Paneer Tikka

Paneer Tikka
Paneer Tikka is a delicious appetizer or a starter dish for any kind of occasion. I made a individual piece tikka's, which are easy to serve. Paneer tikka's are basically made in tandoori oven's when they are served at restaurants & not having a tandoori oven will not stop one to make them at home. Few easy ways to make them are you can pan fry them on stovetop, grill them in oven & can also barbecue them to attain the restaurant style taste. Marinating time plays a big role in making delicious tasting tikka's. The longer the veggies & paneer sit in marinade the better they taste.
Paneer Tikka
Prep Time-45mins {marinade+prepping}
Cook Time-10-15mins
Serves-4to6people 
Pairs well with mint chutney, sweet mango chutney or green chutney.
Ingredients 
12Big pieces of paneer cut in cubes 
1Small chopped in to big pieces 
1bell pepper chopped in to big pieces 
For marinade
1Cup thick curd 
1&1/2Tsp chili powder
1Tsp chat masala powder 
1Tsp garam masala powder
1/2Tsp turmeric
Salt to taste 
12New toothpicks
Directions 
- In a bowl mix all the marinade ingredients. Adjust salt & spice's if needed. 
- Add in chopped veggies & paneer. Mix the well & make sure the marinade has covered the veggies & paneer. Allow it to sit for minimum of 30mins & it can extend up to 2hrs. 
- Screw veggies & paneer as shown in the picture. I used 2onion's, one paneer piece & capsicum. Repeated the pattern with rest of the ingredients. 
- Heat a non-stick pan & slightly oil it. Add the screw's to pan one by one & leave some space in between for them to cook perfectly.
- Rotate the skewers to evenly cook them on all sides. Once they are cooked perfectly, add rest of the skewers to pan & cook them perfectly on all sides. 
- Paneer tikka's are ready to serve. 
Note 
- You can add cumin coriander powder to the spice mix for an added flavor.

Ouă umplute | Deviled Eggs | Stuffed eggs | Romanian Appetizer

Deviled Eggs

Ouă umplute or Stuffed Eggs are a traditional Romanian appetizer. This dish has originated from Italy & became popular in many parts of the world as Deviled Eggs. This crowd-pleasing appetizer is easy to make at home & can be served for any kind of occasion as a starter. The recipe I shared is a basic one; you can always customize it according to your needs.
Deviled Eggs are delectable little things & they vanish just like that in no time. I'm a total fan of this egg bites & was never able to stop with one.

Deviled Eggs
Prep Time-5mins | Cook Time-20mins | Serves-2people
Ingredients
3Hard boiled eggs
1Tbs mayonnaise
1/2Tsp honey mustard
1Tsp black pepper
2Tbs finely chopped onion
Pinch of salt
Parsley/Scallions for garnish
Directions
- Peal the outer shell of eggs & cut them horizontally into half. 
- Scoop out yellow from eggs into a bowl. 
- To the bowl add mayo, mustard, pepper, onion & salt.
- Make them to a smooth paste. Adjust the taste if needed. 
- Scoop up little in to the white half's & top them with garnish. 
- Serve as a appetizer or a snack. 
Note
- You can add little of ketchup or choice any choice of condiment to it. 
- Garnish can be any thing of your choice.

Grissini - Italian Breadsticks | How to Make Grissini


Grissini is an Italian bread, which look thin, Long & crispy to bite. These breadsticks can be served as appetizer & will go perfect by them selves. You can mix & match with your favorite dips when serving.

Prep Time-15mins + 1hr {Making dough + Dough rising} | Cook Time-20mins | Yields - 14sticks | Serves- 2people

Ingredients
3/4Cup all purpose flour
1/4Cup + 1Tbs warm milk
1Tsp instant yeast
1Tbs sugar
1/4Tsp salt
2Tbs butter {@room temperature}
2Tbs sesame seeds for coating
Some oil to grease bowl
Some all purpose flour for dusting
Directions:
Making the dough
- Grease a bowl with oil & keep aside.
- In another bowl mix take flour, yeast, sugar, salt, butter & last add warm milk.
- Using a wooden spoon mix all the ingredients to a smooth dough.
- Dust the wooden board with some flour & knead dough for 10mins.
- Now put the dough in the greased bowl & coat the dough with oil.
- Wrap it with a cloth & keep it in a warm place.
- Allow the dough to rise for 1hr or double it's size.
Baking the sticks
- Preheat oven @350 degrees.
- Prep the cookie sheet with a parchment paper.
- Dust the wooden board with flour & place the risen dough.
- Knead it for few seconds & divide the dough in to 20 small balls.
- Take one ball of dough & roll it into straight, thin stick using your hand.
- Now roll it in sesame seeds & lay on the cookie sheet.
- Repeat the same with rest of the dough balls.
- Now lay them equally on the cookie sheet & allow them to rise for 20mins.
- Bake them @350 degrees for 10mins or till they turn light brown.
- Remove from oven & cool them.
- Serve them with your choice of dip & enjoy.
Note
- I used instant yeast so there was no rising ceremony for it.
- If using active yeast follow the packaged instructions.
- I ended up having a little fat bread sticks after the bread rose.. So roll them little more thinner for sleek sticks.
- I haven't added any flavor to dough. Feel free to customize the dough.
- This recipe was perfect for two.

Mango Avocado Salsa



Mango Avocado Salsa is a tasty & simple dip that can be made & served with less hassle. Salsa is a mexican style dip made of fresh tomatoes, onions, jalapeño peppers, salt & lemon juice. You can always tweak the recipe as you like. This dish doesn't require any cooking & it is easy breezy to make.


Prep Time-10mins | Serves-2people
Ingredients 
1Mango chopped
1Avocado deseeded & chopped 
1Tomato finely chopped 
1/2Onion finely chopped 
2Green chili's / jalapeño deseeded & sliced 
1Tbs lemon juice 
Salt to taste 
Cilantro/Coriander leaves for garnish
Directions 
- In a bowl mix all the above ingredients.
- Adjust taste if needed. 
- Serve with tortilla chips.
Note
-You can cut mangoes to much smaller pieces. Make sure that you won't mash them.

Omelette in Mug

Omelette in Mug

Omelette in Mug - Yes, you read it right. I made an omelet in mug & it was awesome. I came across this recipe in a food site & decided on trying it. I like the traditional way of making omelet but, this way it reduces the make time & less messy too.
This omelette is made of egg whites, but you can also use a whole egg if you like. Egg whites are filled with protein & I love getting protein through food rather than powders. I avoided using oil in this dish & off course you are free to use it. If you want to use oil, grease the mugs with some oil as needed. Using a microwave simplifies & takes less time in cooking. In this dish we microwave it for just 2minutes & the omelette is ready.

Omelette in Mug

Prep Time - 5mins | Cook Time-2minutes | Serves-2people 
Ingredients 
5Egg whites
1/2cup finely chopped onions 
1Tsp red chilli powder {cayenne pepper}
pinch of turmeric
1/4Tsp garam masala powder {optional} 
Salt to taste
Few coriander leaves to garnish
Directions 
- In a bowl add above ingredients other than coriander leaves. 
- Mix them well. Adjust salt & spiciness if needed. 
- Take 2mugs & fill them up half the way. 
- Now microwave it for 1minute.  Take it out & mix the ingredients. 
- Now microwave for another 1minute.
- If you find any liquid then microwave again.
- Garnish with coriander & serve. 
Note
- Microwaving time varies with instrument. Adjust time as needed. 
- You can add veggies if you like. 
- Always use bigger mug. 
- Grease the mugs if you like to. 
- You can use whole egg with out discarding yellows.

Veg Momo

Veg Momo

Arunachal pradesh is one of the indian states, which is covered mostly with himalaya's & also know as nature's paradise. The is a state with vast history & is very famous for the tourism. The staple food of this state consists of rice, meat & grean veggies.
Momos are a very popular dish in Arunachal pradesh. These momo's are easy to make & will taste delicious. The filling can be changed as per one's wish & this dish can be served along with vinegar sauce, chilli garlic sauce, soya sauce or ketchup.

Prep Time-30mins | Cook Time-10mins |Yields- 14 momos

Ingredients
1/2Cup all purpose flour 
Pinch of salt 
1Tbs oil 
Water 
Flour for rolling
Filling
1/4Cup finely chopped cabbage
1/2Cup finely chopped onion
1Tsp ginger garlic paste or chopped 
2Green onion / scallion finely chopped
1/2Tsp Soya sauce 
Sauce 
1Tbs white vinegar
2Tbs water
1Tbs sugar
1Tsp red chili flake
1Garlic finely chopped 
Salt to taste
Directions
- In a bowl mix flour, salt, oil with just enough water to form a dough. Close it with a lid & don't allow the dough to dry out.
- In another bowl mix filling ingredients.
- Now take a small ball of dough & dust it with little flour. 


Veg Momo

- Using a rolling pin roll the dough to a thin sheet. Cut the sheet in to a perfect circle.
- Fill it with a scoop of filling & fold it.
-Now start folding from one corner & fold it through the circle.
- For the half moon shape, fill the sheet with filling & half close it & press the edges carefully.
- Repeat the same with rest of the dough. 
- To steam cook fill half the vessel with water & place the steaming plate on top it. Bring water to boil & them grease the steamer with oil. Now arrange the raw momo's with out sticking each other. 
- Steam cook them for 10min's & serve them warm.


Veg Momo

For the sauce
- Heat a pan with the above ingredients & bring them to boil. The mixture will reduce. Adjust the taste if needed.
- Switch off & transfer to a bowl & serve along with warm momos.

Mini Omelette | Omelette Paniyaram


Omelette

Mini omelette are yummy little omelette's which can be enjoyed as appetizer's or as a snacks. I wanted to make this dish healthy & made of mostly with egg whites & a small amount of yolk. Any addition of vegetables or spices makes this omelette more flavor.


Omelette
Prep Time-10mins | Cook Time-10mins |Yields-6mini Omelettes 
Ingredients
3 Large egg whites 
1 Whole egg 
2 Tbs sun-dried tomatoes chopped
1/2 Cup diced onions 
4 Green chili's chopped
1 Tbs oil
Salt
Directions
- Whisk all the ingredients in a bowl other than oil in a bowl. 
- Heat a mini pancake pan or paniyaram pan with little oil in all the rounds. 
- Half fill the rounds with egg mixture.
- Cook them in medium heat for 3 mins or until they nicely done on the other half. 
- Rotate them with a spoon & allow the other side to cook for another 3mins.
- Switch off heat & remove them.
Serve them with rice or along with ketchup.

Omelette

Note:
- Replace egg whites with 3 full eggs.
- You can replace sun dried tomatoes with veggies like carrots, scallions...etc.
- Green chili's can be replaced with red chili powder.
