Long back when were moving from guest house to a apt in Korea, I was too tired to make dinner of all the shopping to the new home. My sweet hubby hard boiled some eggs and sprinkled with pepper & salt on them. Oh.. I just can't forget how yummy they were.. :) Still my hubby likes either omelet or hard boiled the most.
Coming to the curry the eggs are dipped in a tomato coconut gravy along with cumin. You can make hard boiled eggs or poached eggs for this curry. This curry stands a little different from regular egg curries.
1 Cup of chopped onion
1 Tbs ginger garlic paste
2 Tbs garlic chilli powder
1 tsp turmeric
Few mint leaves to garnish
1 cup of cut tomatoes ( I used Cherry tomatoes)
1/2 coconut pieces
2 tbs Cumin
Grind the ingredients with little water.
1 tsp mustard
1 tsp cumin
2 tbs Olive oil
For hard boil eggs
Take a vessel with cold water and add eggs to it. Bring it to boil for 5mins with a covered lid switch of the heat. Allow them to sit for 5mins aside and run them thru cold water.
They are ready to remove the shell.

Heat a pan with oil and add seasoning to it. Once the mustard starts jumping add ginger garlic paste & fry it for 2 mins. Now add onions and fry them till they are transparent.
Now add the grind ingredients to pan & bring it to boil. Then add chilli powder, salt & turmeric to pan. Allow them to cook for 10 mins & garnish with coriander leaves.
Serve with rice, naan or roti.
Out come: The taste was finger licking & it was irresistible.
